Fukaura Tuna

A Premium Wild Bluefin Tuna from Aomori

When people think of tuna from Aomori Prefecture, Oma Tuna is often the first name that comes to mind. However, the town of Fukaura, located at the westernmost tip of Aomori Prefecture, is actually the region where the largest volume of wild bluefin tuna is landed within the prefecture.

The wild bluefin tuna caught in Fukaura is known as Fukaura Tuna. Because it is mainly caught from spring through summer, it is also known as “Summer Tuna.”

Unlike tuna known primarily for its extremely rich fatty flesh, Fukaura Tuna is characterized by a pleasant balance of fat and a moist, flavorful lean texture. Its clean and satisfying taste has made it a popular local delicacy.

A Rich Marine Environment Creates High-Quality Tuna

Fukaura is located at the foot of the Shirakami Mountains, a UNESCO World Heritage natural site. The area’s rich natural environment plays an important role in supporting the productive fishing grounds off the coast of Fukaura.

Snowmelt and freshwater flowing from the Shirakami Mountains carry nutrients into the Sea of Japan. At the same time, the Tsushima Warm Current transports a wide variety of marine life into the region.

These conditions encourage the growth of abundant plankton, which forms the foundation of the local marine ecosystem. Small fish and other seafood gather in the nutrient-rich waters, attracting larger predators. At the top of this food chain is the powerful bluefin tuna.

This close connection between the mountains and the sea helps create the rich fishing environment that supports Fukaura Tuna.

One of Aomori’s Leading Tuna Fishing Areas

Fukaura has historically accounted for a substantial share of Aomori Prefecture’s total bluefin tuna landings. In 2012, the town recorded approximately 450 tons of bluefin tuna, with a total landing value of around 630 million yen, one of the highest figures ever recorded at the time.

The volume of tuna landed in Fukaura even exceeded that of Oma during that period. This highlights the importance of Fukaura as a major bluefin tuna fishing ground in Aomori.

Fishing Methods and the Best Season

Enjoy Fukaura Tuna from Spring through Autumn

Different fishing methods are used depending on the season. From around May through August, Fukaura Tuna is mainly caught using fixed-net fishing. From September onward, fishermen use longline fishing.

Fixed-net fishing involves placing nets along the routes taken by fish. Because the fish do not need to be actively chased, this method can reduce stress on the catch and help preserve its freshness.

Longline fishing is a traditional technique in which baited hooks are attached at intervals along a long main line. Tuna caught using this method are carefully handled, contributing to the high quality for which Fukaura Tuna is known.

Fukaura’s summer tuna is especially appealing for those who prefer a lighter, cleaner tuna flavor. Its fat content is not overwhelmingly rich, allowing the natural umami of the wild bluefin tuna to stand out.

Experience Fukaura Tuna Through Local Cuisine

Fukaura Tuna Steak Bowl

One of the most popular ways to experience this local specialty is the Fukaura Tuna Steak Bowl. This unique meal allows visitors to enjoy Fukaura Tuna prepared in three different ways, served in three small bowls.

The set typically includes a fresh tuna sashimi bowl, a lightly seared tuna steak bowl, and a tuna steak bowl seared on both sides. The dishes are accompanied by fresh locally grown vegetables, allowing diners to compare the different textures and flavors of the same tuna.

The medium-rare, one-sided seared tuna is particularly popular. Lightly searing the outside while keeping the inside tender creates an appealing contrast and brings out the rich umami of the wild bluefin tuna.

Fukaura Tuna Burger

Visitors can also enjoy Fukaura Tuna in a more casual style as a Fukaura Tuna Burger. At a local shop near the Kaorise Coast, the burger is made using 100% Fukaura Tuna.

The luxurious tuna patty can incorporate different parts of the fish, including ōtoro (fatty tuna), chūtoro (medium-fatty tuna), lean tuna, and nakaochi, the meat taken from around the bones.

These ingredients are placed inside homemade buns, creating an unusual but delicious combination of local seafood and casual Western-style food. The burger has become a popular choice among visitors exploring the Fukaura area.

Explore Fukaura Alongside Its Local Cuisine
