Fresh Squid from Hachinohe
To make Hachinohe Bakudan, fresh squid caught along the coast of Aomori is cut into small cubes and marinated in a special soy sauce-based marinade. The sauce is subtly flavored with garlic and ginger, including garlic from Takko Town, which is famous for its high-quality garlic.
The seasoned squid is then served over a bowl of warm rice, commonly accompanied by salmon roe and egg yolk. The combination brings together the freshness and firm texture of squid with the rich, savory flavors of the sauce and toppings.
A Perfect Balance of Texture and Flavor
One of the greatest attractions of Hachinohe Bakudan is the contrast between the pleasantly chewy squid and the mellow richness of egg yolk. When the egg yolk is mixed into the soy-based sauce, it softens the salty flavor and creates a smooth, creamy taste that pairs beautifully with the squid and rice.
The flavors are so well balanced that it is easy to find yourself quickly eating one bite after another. The combination of seafood, rice, and Japanese-style seasoning also makes this dish a satisfying introduction to the everyday food culture of Hachinohe.
Why Is It Called “Bakudan”?
The name “Hachinohe Bakudan” literally means “Hachinohe Bomb.” The unusual name is said to come from the appearance of the bowl after the ingredients are thoroughly mixed together. As the squid, egg yolk, sauce, rice, and other toppings are stirred, the colorful ingredients become mixed up, creating an appearance reminiscent of the scene left behind after a bomb has exploded.
Despite its dramatic name, Hachinohe Bakudan is a simple and approachable local specialty. For visitors, enjoying this rice bowl is a delicious way to experience Hachinohe’s deep connection with the sea and its rich squid-fishing culture.
